Veganuary special recipe

As it's Veganuary, here is another of Head Chef Lesley's favourite vegan dishes.

Pea and Edamame Bean Burger with Avocado and Mint Dressing on a Portabello Mushroom
Serves 4
Pea and Edamame Bean Burger
150g Of peas
75g of Edamame Beans
125g of soft Tofu
2 Tbsp of chopped Chives
2 Tbsp of Cous Cous (do not cook)
1 Tbsp of Sesame Seeds

Avocado and Mint Dressing
1 Avocado chopped roughly
1 Lemon zested and juiced
2 Tbsp of fresh Mint leaves
2 Tbsp of creamed Coconut

Portabello Mushroom

Method
Put peas and beans in a bowl cover with boiling water leave for 5 minutes. Drain well and place in bowl with all the other ingredients and blend with a stick blender till roughly chopped. Season with Salt and Pepper to taste.
Form into 4 patties and chill for 10 minutes. Pan fry burgers gently for 5 mins on each side
To make dressing puree all ingredients, adding lemon juice at the end and   season to taste, you may need to add a little water to desired consistency  
Peel Portabello Mushroom and remove stalk and cook for 5 minutes until al dente.
